As mentioned previously, we recently hosted a Stella & Dot party. We made some signature cocktails, individual Greek salads, sweet and spicy meatballs and knew that we needed to offer something sweet. Ultimately, the decision was made to make sugar cookie fruit pies. Initially, we were going to prepare the pies ourselves but then realized that it would be more fun for guests to be able to choose their own preferred toppings. We simply baked the cookie crust, filled them with Cool Whip, and set out small bowls of fruit toppings. This way guests could select exactly what they wanted.
Making these pies is ridiculously easy. First, you start by using prepared sugar cookie mix or you can obviously make your own dough (cough, cough…if you’re more motivated than us). Press the dough into ungreased molds on a mini cupcake tray. No need to be meticulous. The dough will even itself out nicely. Follow directions on cookie dough packaging as to how to bake the cups properly. Once baking is completed, let the sugar cookie cups cool. Once cool, fill them to the top with Cool Whip and set aside.
Next, cut up desired fruit into tiny pieces. Place each fruit in its’ own small dish and add a serving utensil for each one.
We opted to use wooden spoons from Michaels for serving…
Set out the whipped cream filled sugar cookie cups and place the fruit in front of them. Make sure that guests know to feel free to serve themselves and that’s it! Pretty simple, right?
As you can see from the picture below, we also opted to make traditional sugar cookies and spread whipped cream on top as an alternative “pie crust” option.
