In honor of today being National Ice Cream Day, we wanted to share this fun idea with you! If you love ice cream and you also find it hard to resist an ooey gooey brownie, then this easy recipe is perfect for you. All you need are four basic ingredients…a box of brownie mix (unless you would like to make them from scratch), ice cream, sprinkles, and chocolate syrup.
First, mix your brownies according to the directions on the box. Once the batter is mixed thoroughly, pour them into a GREASED muffin tin. Fill each cup approximately 2/3 of the way. (You can also use cupcake liners if you want to incorporate this dessert into a specific theme.)
Bake the brownies for approximately 22-25 minutes or until toothpick comes out clean. Make sure that the brownies are baked well otherwise the next step will prove messy.
As soon as you remove the brownies from the oven, you will want to depress the tops of them with a greased utensil. For this step, we used an ice cream scoop. Press down lightly in the center of the brownie and create the look of a little bowl.
Wait for the brownies to cool completely and then gently pull the out of the tray.
Now the fun part…pop your brownie into the microwave for ten seconds, top with a scoop of ice cream, drizzle some chocolate syrup and finish with some colorful sprinkles.
This is such a cute dessert and is a big hit with little ones. We made these with Lindsey’s young nieces and they LOVED adding all of the toppings. This would be a great treat to serve at a birthday in lieu of cupcakes or cake.
