We both enjoy the traditional apple pie, but when we saw these smaller ‘cookie’ versions, we just had to give them a try.
We found this recipe by Darling Gourmet during our many hours browsing Pinterest…yes, we are ALWAYS on Pinterest! While the recipe only calls for 6 ingredients, it does take a good 25-30 minutes to prep. Now, it may be possible that it took us a little longer because we were chatting and hanging out but who cooks without chatting?
Ingredients
1 package Pillsbury Refrigerated Pie Crusts
1 jar caramel sauce
1 can apple pie filling
1 egg, lightly beaten
3 tablespoons cinnamon sugar
2 tablespoons Gold Medal flour for sprinkling
First, preheat your oven to 350 degrees F. There is a lot to be done while the oven is heating up!
Make sure you have enough space to spread out. Go ahead and sprinkle a little flour on work surface. Roll out one of the two pie crusts to slightly increase the surface area.
We, then, used the top of a mason jar to cut perfect round circles for our cookies.
You should end up with approximately 12 circles.
Once we had all our cookies cut, we placed them on a non-stick baking sheet and spread a thin layer of caramel sauce over the crust.
Next, pour the can of apple pie filling into a bowl. You will want to use a spoon or some other utensil to cut the apple slices into smaller chunks.
Once you have cut the applies into smaller pieces, place a tablespoon of filling onto each of the cookies. We did not use the entire can of filling.
Now its time to prep the tops of the cookies. Sprinkle a little flour on your work surface again. Roll out the other pie crust dough and use a knife to cut a bunch of strips about ½ inch wide.
Using the strips, make a lattice over the top of the pie cookies. Once all of the cookies have tops, brush a little of the egg across the strips on the cookies and sprinkle with cinnamon sugar.
Pop the cookies into the over for approximately 20 to 25 minutes.
These turned out GREAT. We actually like them more than traditional apple pie! We would suggest giving these a try the next time you are looking for a treat for yourself or for others.
