We repeatedly saw the recipe for No-Bake Energy Bites pop up in our Pinterest feeds. The recipe seemed simple enough but we wondered, just how tasty are these little treats?
The recipe only calls for oatmeal, chocolate chips, peanut butter, toasted coconut, honey, vanilla extract and flax seed. Seemed easy enough…and it was! We were pleasantly surprised by just how yummy these little bites of goodness turned out, especially because it was such an easy task to make them. Most surprisingly perhaps is the fact that they are delicious despite the fact that there is NO BUTTER included in the recipe. If a granola bar and a peanut butter cookie had a baby, this is what it would taste like.
METHOD
In a mixing bowl, slowly stir together the peanut butter, honey and vanilla extract. Mix the remaining ingredients in until everything is fully-coated. Place the bowl in the refrigerator for approximately 30 minutes. Once chilled, remove the mixture from the refrigerator and roll into 1-inch balls. Store in an airtight container in the refrigerator.
These make the perfect snack when you are in a hurry and just want to grab something quickly. The peanut butter and the oats really help to make you feel like you are eating something substantial. Please give us your feedback if you make them! Hope that you enjoy them as much as we did!

Rachel, they were super easy to make. We had noticed that so many homemade granola-type snacks had laundry list of ingredients and required numerous steps. This one is perfect for when you have fifteen free minutes. Plus, there is plenty of leftover ingredients for a second and third batch in the future!
